Door te fermenteren verrijk je je eten en verander je de smaak. In een paar uur tijd geef je je eten een heerlijke, unieke smaak. Denk bij groenten vooral aan harde groenten als rode biet, kool, wortel, ui en pompoen. Zachtere groenten, zoals komkommer, tomaat en spinazie worden snel papperig, dus fermenteer deze kort. Ook fruit is goed te fermenteren. Denk dan vooral aan perziken, pruimen, abrikozen en exotisch fruit als ananas en mango.
